Aster Lane Bread is located along the Beatty Saugeen River near Neustadt, ON. Here we have built a small bakery with a wood-fired brick oven large enough to fit 40 loaves at one time. We also keep a small number of beehives.
We bake only naturally fermented (100% sourdough) bread using only lightly sifted and whole grain flours. For several reasons, including improved health and flavour, we do not add commercial yeast and keep our loaves fairly whole-grainy. Currently we use organic flour sourced from Ontario and Canadian grains.
